Mixed Vegetable Soup III
A hearty low-calorie vegetable soup.
2 tbsps olive oil
1 packet onion soup
43 1/2 fl oz chicken broth
1/2 <span class="measurestring" title="head, medium (about 5-3/4" dia)">head medium</span> cabbage, shredded
2 <span class="measurestring" title="large (7-1/4" to 8-1/2" long)">large</span> carrots, chopped
2 <span class="measurestring" title="stalk large (11"-12" long)">stalks large</span> celery, chopped
2 cloves garlic
8 oz mushrooms, chopped
1 large onion, chopped
1 <span class="measurestring" title="medium (2-1/4" to 3-1/4" dia.)">medium</span> potato, chopped
2 cups sliced yellow squash
1 large zucchini, chopped
3 cans diced tomatoes
2 <span class="measurestring" title="cup (8 fl oz)">cups</span> water
Heat the olive oil in a large stock pot over medium heat.
Add the carrots, celery, and onion until tender. Add the garlic and sauté until fragrant.
Add the chicken stock (low fat if available) and tomatoes. Bring to a boil.
Add the potato, zucchini, yellow squash, mushrooms, and cabbage.
Reduce heat, simmer, and serve!
