Vegetable Minestrone Soup
A tasty and healthy vegetable based soup, to be made in a slow cooker.
4 cups fat free vegetable broth
18 oz crushed tomatoes
1 1/2 cups chopped carrots
2/3 cup zucchini, cut into 1/2" slices
1 <span class="measurestring" title="pepper, large (3-3/4" long, 3" dia)">large</span> yellow sweet pepper, cut into 1/2" pieces
1/2 cup green onions, sliced
2 cloves garlic, finely chopped
2 cups shredded cabbage
2 tsps marjoram
1 tsp salt
1/4 tsp ground black pepper
1 cup instant rice
4 tbsps chopped fresh basil
Mix all ingredients except rice and basil in a 3 1/2 to 6 quart slow cooker.
Cover and cook on low heat setting for 6 to 8 hours or until vegetables are tender.
Stir in rice and basil. (Note, if you are not using instant rice, cook the rice first as per package directions.)
Cover and cook on low heat setting for about 15 minutes or until rice is tender.
