Vegetable Bean Soup
Very easy to make soup... my boyfriend loved it!
1/2 tbsp ground pepper
1/2 tsp salt
2 tsps olive oil
1 cube vegetable broth
2 medium carrots, sliced
2 <span class="measurestring" title="stalk, medium (7-1/2" - 8" long)">stalks medium</span> celery
2 cloves garlic
1 cup sliced onions
1 can tomatoes, diced
1 <span class="measurestring" title="cup (8 fl oz)">cup</span> water
1 cup kidney beans
1 cup white beans
1/2 g fresh cilantro
Heat the oil in a large saucepan over medium heat.
Add celery, carrot, onion, and garlic (optional). Cook, stirring occasionally until softened, about 10 minutes.
Stir in the tomatoes, kidney beans (rinsed and drained), white beans (rinsed and drained) and prepared vegetable broth (water and cube); bring to a boil.
Reduce the heat and simmer, covered, stirring occasionally, until the flavors are blended, about 30 minutes.
Add cilantro, salt and pepper; cook, stirring occasionally, about 5 minutes.
