Vegetable and Bean Soup
A quick, easy and healthy soup with lots of vegetables.
6 cubes chicken stock cubes
1 <span class="measurestring" title="package (10 oz)">package</span> frozen green beans
1 <span class="measurestring" title="package (10 oz)">package</span> frozen carrots
1 <span class="measurestring" title="package (10 oz)">package</span> corn
1 <span class="measurestring" title="package (10 oz)">package</span> frozen peas
1 <span class="measurestring" title="package (10 oz)">package</span> spinach
2 cans diced tomatoes
64 fl oz tomato juice
6 <span class="measurestring" title="cup (8 fl oz)">cups</span> water
1 1/2 cups kidney beans
In a large pot add tomato juice, chicken stock cubes, corn, carrots, green beans, kidney beans, diced tomatoes and 6 - 8 cups of water.
Bring to boil and simmer for 20 minutes.
Add green peas and spinach.
Simmer for about 5 minutes until peas are heated through.
