Ingredients
Directions
1. Combine bell peppers, scallions and cilantro in a mixing bowl.
2. Add the red wine vinegar, olive oil, garlic, salt and pepper and stir (add more salt and or pepper to taste).
3. Add the quinoa and stir until everything is well incorporated.
4. Fold in the black beans.
5. Serve immediately or let sit for a bit for the flavors to meld.
6. Note: can serve on a lettuce leaf chilled or at room temperature.
