Gingerbread Cake II
A lighter alternative to heavy holiday desserts.
3 large eggs
1 1/2 tsps cinnamon
1/2 tsp ground cloves
2 tsps ground ginger
1/2 tsp salt
1/3 cup vegetable oil
2 cups applesauce
1 tsp baking powder
2 tsps baking soda
3/4 cup molasses
600 g granular splenda
3 cups flour
Pre-heat oven to 350 °F (175 °C). Spray glass 9 x 13" pan with cooking spray.
Pour applesauce, molasses and oil into large mixing bowl. Add eggs and stir well.
Blend remaining dry ingredients in a separate bowl.
Add dry ingredients to applesauce mixture, stir well.
Pour batter into prepared pan and bake for 35 to 40 minutes until a toothpick inserted into the center comes out clean.
Cool pan on a wire rack, approximately 20 minutes.
