Egg and Bacon Breakfast Muffins
A protein packed on-the-go breakfast muffin.
1 small chopped tomato
1 tsp pepper
1 tsp salt
5 tsps hot sauce
1/2 cup shredded colby jack cheese
1/4 tsp garlic powder
1/2 cup chopped onion
4 tbsps chopped green onion
6 <span class="measurestring" title="thin slice (yield after cooking)">thin slices</span> bacon
12 large eggs
In a skillet, cook chopped bacon over medium heat until cooked through. Drain grease.
In a bowl, beat the eggs. Add onion, green onion, tomato, salt, pepper, garlic powder, and hot sauce (like Tapatio brand).
Stir in bacon and cheese.
Spoon by 1/3 cupfuls into greased muffin cups.
Bake at 350° F (175° C) for 20-25 minutes or until tops are set and a knife inserted near the center comes out clean.
