Directions

1. Mix flour with water, mix, and rest for 60 minutes.
2. Mix in salt and rest for 30 minutes.
3. Mix in yeast and rest for 30 minutes.
4. Stretch and fold, then rest for 60 minutes. Repeat this step for two more times.
5. Shape into a ball. Cover and refrigerate overnight.
6. Next day, preheat the oven to 450°F.
7. Score the dough and bake for 40 minutes.
