Smoked Mozzarella, Bean and Corn Salad
Black beans and sauteed corn are the heart of this refreshing, but filling summertime favorite.
1 3/4 cups black beans
2 medium ears of corn, kernels only
2 oz smoked mozzarella
1/2 whole tomato, chopped
1/3 <span class="measurestring" title="medium (approx 2-3/4" long, 2-1/2" dia)">medium</span> bell pepper, chopped
juice of half a lime
1/2 tsp olive oil
1 tsp cumin
1/4 cup cilantro
1/2 cup red onion. chopped
1 dash salt
1 dash pepper
In a large bowl combine lime juice, olive oil, beans, cumin, and salt and pepper to taste. Set aside.
Heat a nonstick skillet over medium-high heat, add corn and bell pepper and pan-roast, stirring occasionally until lightly browned, about 4 minutes. Remove from heat and let cool.
Stir corn, peppers and remaining ingredients into black bean mixture and toss together.
Chill until ready to serve. Divide evenly into four salad bowls.
