Homemade Black Bean Soup
Quick and easy black bean soup the family will love.
1 tbsp margarine
10 oz kielbasa, chopped
2 small tomatoes, chopped
1 tsp crumbled bay leaf
44 oz black beans
2 oz queso cheese
1 1/2 tbsps cumin
5 tsps oregano leaves
4 tsps garlic, chopped
1 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> onion, chopped
2 tbsps green onion, chopped
1 <span class="measurestring" title="medium (approx 2-3/4" long, 2-1/2" dia)">medium</span> green pepper, chopped
2 <span class="measurestring" title="cup (8 fl oz)">cups</span> water
Puree 15 oz of black beans with one tomato, queso cheese, bay leaf and 1/2 cup of water. Set aside.
In a pot, melt margarine adding in onion, green peppers, garlic and one tomato.
After the onions have caramelized and green peppers have started to tender, add in kielbasa, oregano, and cumin.
After kielbasa is cooked, stir in pureed beans and green onion.
Bring mixture to a simmer and add remaining black beans and water.
