Sweet Potato Chilli
Sweet potato, carrots, peppers and protein packed beans in tomato sauce.
||Clean and chop all vegetables into bite size pieces or smaller.
||Add oil to pan and bring to a medium-high heat. Saute all vegetables starting with the sweet potatoes, carrots, onions and garlic for 7 minutes. Add peppers and cook an additional 7-10 minutes.
||Add the tomatoes and the rest of the seasonings. Simmer for 5 minutes.
||Add vegetable broth and kidney beans and bring to a boil, allow to simmer for 20 minutes.
||Serve adding salt and pepper to taste.
