Black Bean Soup
A quick and very filling soup that doubles as a meal.
||Cook onion, celery and garlic in olive oil over medium-high heat until soft.
||Add chicken broth, black beans, coriander and cayenne pepper. Simmer uncovered, about 10 minutes.
||Stir in balsamic vinegar.
||Serve warm and garnish with cilantro.
||Note: optional to take soup (when cooled) and transfer to blender and process to smooth consistency. Serve warmed.
