||Wash and slice potatoes into 1/4" slices.
||Spray non-stick skillet with cooking spray like Pam, and pre-heat briefly. Do not allow to brown or smoke, just a few seconds.
||Place potatoes and onion in pan, add salt and pepper, spray top lightly with cooking spray and cover with lid.
||Cook on medium to medium-low heat until browned and turn potatoes.
||Cook 5 minutes longer to brown slightly then add water, replace lid and continue to cook until potatoes are tender and water is evaporated.
||Spray with buttery spray and serve.
||Note: green peppers are also good with this recipe.
