An extremely simple lentil dish which is very good over rice.
2 cups lentils
1 cup chopped onion
3 cups chicken broth
1 cup chopped broccoli
1 cup chopped red pepper
1 tbsp curry powder
1 tbsp lemon juice
Sauté the onions in a small amount of the broth and the lemon juice.
When the onions are translucent and fragrant, add the curry powder and lentils and sauté for another minute or so.
Add the rest of the ingredients and simmer until the vegetables are cooked.
Adjust the amount of curry to taste.
Serve over long grain rice.
