Slightly healthier than regular muffins.
1 large egg
1 1/4 cups nonfat milk
1/4 tsp cinnamon
1/4 tsp salt
2 <span class="measurestring" title="cup (1 nlea serving)">cups</span> bran flakes
1/4 cup applesauce
2 tsps baking powder
1/4 cup sugar
3/4 cup flour
Stir dry ingredients together. Set aside.
Place cereal and milk into large mixing bowl. Let stand 2-3 minutes.
Stir egg and applesauce into cereal mixture.
Add flour mixture, stirring until moistened.
Optional to fold in some raisins or a little pumpkin.
Portion batter evenly into 12 greased muffin cups. Optional to add some chopped nuts on top.
Bake at 400 °F (200 °C) , for 18-20 minutes or until lightly browned.
