Improvised high-fiber mini pumpkin muffins.

  1. Pre-heat oven to 350 °F (175 °C).
  2. Mix flour, oats, baking powder, soda and pepper. In a separate bowl, mix pumpkin, applesauce, eggs, milk, vanilla, walnuts and raisins. No sugar needed because the pumpkin, applesauce and raisin make it sweet.
  3. Add dry mix to the pumpkin and stir until just blended.
  4. Lightly grease muffin pans with margarine (optional) or use non-stick spray.
  5. Place muffin pan in the center of the oven and bake for about 20-25 minutes (check to see if done with a knife).
  6. Let cool 15 minutes and enjoy.
