Warm Lamb Salad with Black Olives

  1. In a large non-stick fry pan cook lamb until brown and cooked as desired.
  2. Slice lamb and combine it with garlic, vinegar, oil and olives in a large bowl.
  3. Heat butter in pan and cook asparagus, capsicum, mushrooms, stir until asparagus is tender.
  4. Add to lamb mixture in the bowl and toss gently.
  5. Serve lamb mixture with rocket.
  6. Note: you can use lamb cutlets, chops or fillets.
