Turkey and Black Bean Chili
A sweet turkey chili with prunes or raisins.
1 tbsp chili powder
1 tsp cumin
2 tsps ground oregano
1/4 tsp ground red pepper
1/2 tsp salt
1 tsp vegetable oil
20 oz ground turkey
4 oz prunes, pitted and chopped
3 cloves garlic, chopped
1 1/4 cups chopped onions
2 1/4 <span class="measurestring" title="cup (8 fl oz)">cups</span> water
15 oz black beans, undrained
Cook turkey in a large non-stick skillet over medium-high heat until browned, stirring to crumble. Drain in a colander.
Heat oil in the skillet over medium heat. Add onions and garlic, and sauté 7 minutes. Add chili powder, oregano, cumin, salt, and red pepper. Cook 1 minute.
Return turkey to the skillet, stir in 1 1/4 cups water (wine, stock), prunes (or raisins) and beans. Bring to a boil, reduce heat, and simmer, uncovered, for 5 minutes.
Serve over rice if desired.
