Turkey and Black Bean Chili
A sweet turkey chili with prunes or raisins.
||Cook turkey in a large non-stick skillet over medium-high heat until browned, stirring to crumble. Drain in a colander.
||Heat oil in the skillet over medium heat. Add onions and garlic, and sauté 7 minutes. Add chili powder, oregano, cumin, salt, and red pepper. Cook 1 minute.
||Return turkey to the skillet, stir in 1 1/4 cups water (wine, stock), prunes (or raisins) and beans. Bring to a boil, reduce heat, and simmer, uncovered, for 5 minutes.
||Serve over rice if desired.
