Raisin Bran Muffins
High fiber raisin bran muffins, great to freeze and eat every morning.
2 tbsp flax seed
1 1/2 cups all purpose flour
2 large eggs
3 cups raisin bran
1 3/4 cups 2% reduced fat milk
1/4 tsp cinnamon
1/4 tsp salt
1/4 cup fat free margarine
5 1/2 tsps baking powder
1/2 cup honey
Pre-heat oven to 400 °F (200 °C).
Mix together the all-purpose flour, baking powder, cinnamon and salt.
Pour milk over raisin bran, let stand to get soft (5-8 minutes), stir in eggs, honey and butter.
Add dry ingredients and stir until well mixed (about 2 minutes with electric mixer on medium.)
Spoon batter into muffin cups, makes about 18.
Bake for 18-20 minutes or until golden brown.
