Moist Turkey Meatloaf
Who needs beef meatloaf when you can have this amazingly moist turkey meatloaf.
1 <span class="measurestring" title="package (10 oz)">package</span> frozen spinach, defrosted
1 cup red kidney beans
1/2 cup egg beaters
3 oz onion, chopped
1 red bell pepper
1 tbsp cayenne pepper
1/4 cup ketchup
16 oz lean ground turkey
Pre-heat oven to 350° F (175° C).
Sauté pepper and onion in cooking spray until soft.
In a bowl mix ground turkey, spinach, sauteed vegetables, beans and egg beaters.
With cooking spray grease bread pan.
Mold meat mixture to fit. Bake about 30 minutes.
In a small bowl mix ketchup with cayenne pepper and spread over top of loaf.
Bake another 10 minutes or until fully cooked.
