Mini Apple Pies
A magic mini apple pie that is very filling.
1 reduced fat homestyle buttermilk biscuit
1 pat butter
1 tsp cinnamon
1 <span class="measurestring" title="medium (2-3/4" dia) (approx 3 per lb)">medium</span> apple
1 tsp packed brown sugar
Take biscuit, and place on a greased cookie sheet.
Slice apple thinly, place on top of biscuit (press down a little to flatten the biscuit slightly). You may not need the entire apple to cover the biscuit.
Take butter and slice very thinly. Spread out over the apple slices.
Sprinkle with brown sugar. Add cinnamon and ginger, as much as desired.
Bake at 375 °F (190 °C) for 20 minutes. It takes a little longer than the biscuits normally would, due to the toppings.
Note: add an optional scoop of reduced fat vanilla ice cream for an extra special treat.
