Tasty meatloaf that works for Phase 2 of the South Beach diet.
2 <span class="measurestring" title="cup (4.86 large eggs)">cups</span> eggs
1/4 tbsp black pepper
2 tsps or 1 packet mustard
1 tbsp worcestershire sauce
1 cup oats cereal
1/2 cup chopped onions
1/2 cup chopped bell pepper
1 1/2 lbs extra lean ground beef
5 oz fat free evaporated milk
8 oz tomato sauce
Mix all ingredients until thoroughly blended.
Shape into large ball and place in 9" pie plate.
Make a hole in center completely through to plate.
Place in microwave and cook to internal temperature of 70 °F (165 °C).
Remove from microwave and drain any grease.
Allow to stand about 10 minutes before slicing and serving.
