Curried Chickpeas and Spinach
Great vegetarian dish, serve with rice.

  1. Heat oil in a pan and cook onions until glassy
  2. Add cumin, tomato paste, salt, pepper and sugar. Stir over medium heat for 5 minutes.
  3. Add chickpeas and spinach. Reduce heat, cover and simmer for 20- 30 minutes, stirring occasionally.
