Heat the olive oil on the stove top in a pan large enough for the meat.
Add half the onion and all of the garlic to the hot oil. Let simmer for a few minutes until the onions become clear.
Add the ground meat and cook until brown. Season with salt and pepper.
Dice and slice tomatoes, potatoes, mushrooms and any other vegetables you may have lying around the fridge.
In either a crock pot or large stove top pot add the tomato sauce, beans and vegetables (including the remaining onion). Add a jalapeno or haberno pepper for spice if preferred. Season with salt, pepper, oregano and red pepper flakes.
Add all ingredients to the pot. Heat until it is boiling then reduce to low.
Chili is done when the potatoes are cooked, usually 45-60 minutes stirring every 10 minutes. Enjoy!
Note: can use lean ground beef instead and can be made in an all day crock or on the stove top.
