Green Italian Rice Salad
This fresh and tasty salad can be thrown together in an instant.
1 cup cooked brown rice
1 cup chopped sweet peppers, mixed colors
1/2 cup broad beans
1 cup pared, chopped cucumber
1/2 cup cubed avocado
1 tbsp olive oil
1/4 tbsp lemon juice
1/2 cup chopped spring onion
1 tsp chopped chives
1 dash pepper
1 dash salt
Simply mix together the rice, peppers, avocado, beans, two-thirds of the spring onions (scallions) and cucumber.
Make the dressing using the oil, lemon juice, remaining spring onion, chives, salt and pepper.
Drizzle dressing over the salad.
