An egg, mustard, relish and mayo based classic.
3/4 cup light mayonnaise
6 large eggs
4 tsp mustard
1 cup chopped celery
1 cup chopped onion
3 lbs boiled potatoes
1/4 cup pickle relish
Wash, cube and boil potatoes.
Hard boil the eggs.
Dice onion, celery and egg.
Add drained and cooked potatoes, mayonnaise and mustard.
Add salt and pepper if desired.
Mix well and served chilled.
