1 tbsp sunflower oil
1 tsp salt
1 tsp pepper
1/2 cup peas and carrots
1 <span class="measurestring" title="cup (4.86 large eggs)">cup</span> eggs
Rice cauliflower in food processor.
Heat oil, add vegetables and seasonings.
When a bit translucent, push to side and crack and scramble egg on clear side.
Drag vegetables through.
Season with soy or ginger dressing, curry powder, or other spices (adding salsa makes a quick Spanish rice).
