Thai Beef Salad with Peanuts
A quick toss together salad that's tasty and filling.

  1. Trim excess fat from beef. Cut into thin strips and place in a medium bowl.
  2. Add lime juice, soy sauce, water, ginger, and garlic. Toss to mix.
  3. Add green onions, cucumber, and bell pepper. Toss again. Cover and refrigerate at least 1-2 hours, or until time to serve.
  4. Place lettuce in a salad bowl. Pour beef, vegetables, and any remaining liquid over the lettuce.
  5. Toss together just before serving, then sprinkle peanuts over the top.
