Roasted sweet potatoes and black beans with arugula and red potatoes tossed in a red wine vinaigrette.

  1. Peel and medium dice sweet potatoes. Sprinkle with 2 tablespoons olive oil, salt, and pepper to taste. Roast at 400 °F (205 °C) for 15 minutes or until tender.
  2. Rinse and dry black beans.
  3. Wash, seed, and medium dice red pepper.
  4. Peel and mince garlic. Add to small bowl with remaining ingredients and whisk and set aside.
  5. Put together salad, toss and enjoy.
