2 1/2 cups flour
1/4 cup brown sugar
2 tsps baking powder
1 tsp baking soda
1/2 tsp kosher salt
2 tsps ground cinnamon
1 tsp ground ginger
2 large eggs
1 cup canned pumpkin
2 cups skim milk
6 tbsps liquid egg whites
Mix the dry ingredients with a whisk.
Add remaining ingredients and mix well.
Let batter sit for 15 minutes. Heat up waffle maker.
Using a 1/4 cup measure, pour batter into each mold - cook for 4-6 minutes, or until desired consistency.
Serve with fresh fruit and pancake syrup.
