Kale Leek Soup
A heavenly and healthy dish to warm you up on those cold fall and winter days.
1 1/2 medium russet potatoes
1 cup kale, chopped
2 1/2 <span class="measurestring" title="cup (8 fl oz)">cups</span> water
Bring 2 1/2 cups of water to a boil, add in a pinch of salt to taste.
Chop all vegetables into chunks, wash and place them into the pot.
Boil the vegetables till they become tender and can easily be poked with a fork.
Place half a cup of water onto a blender and add your cooked vegetables then blend on a medium speed until smooth. Add salt and pepper to taste.
Serve and enjoy.
