Skillet cooked halibut with wine and capers.
2 tbsps unsalted butter
3 tbsps drained capers
1 tbsp olive oil
2 cloves garlic
3 fl oz dry white wine
Atlantic and Pacific Halibut
1/4 cup flour
Heat the oil and butter in a large skillet over medium-high heat.
Season halibut pieces with salt and pepper and dredge in flour.
Fry the halibut until golden brown on both sides and fish flakes easily, about 6-7 minutes total.
Remove from pan and transfer to dinner plates keeping warm.
Return pan to heat; pour wine into the hot empty skillet and use a spatula to scrape any browned bits from the bottom.
Let the wine reduce by half then stir in the garlic and capers.
Let sauce simmer for a minute to blend flavors and then pour sauce over fish and serve.
