Banana Walnut Muffins
The best banana bread ever. Baked in muffin cups for instant portion control.
1/2 cup coconut oil
3/4 <span class="measurestring" title="cup, shelled (50 halves)">cup shelled</span> walnuts
2 large eggs
2 cups white flour
1/4 cup lowfat buttermilk
1/2 tsp salt
1 tsp vanilla extract
3 <span class="measurestring" title="medium (7" to 7-7/8" long)">medium</span> bananas
1 tsp baking soda
1 1/2 cups granulated sugar
Sift together flour, baking soda and salt. Set aside.
Using mixer, beat together sugar, coconut oil and vanilla extract. Beat for 5 minutes at moderate speed until light and fluffy.
With mixer running, add in eggs. Mash bananas with fork. Add bananas to mixer. Mix well.
Stir in flour mixture, alternating with buttermilk. Mix only enough to moisten well; do not over beat. Stir in walnuts.
Bake at 350 °F (175 °C) for 20-25 minutes.
