Delicious banana, walnut and raisin bread or even as cake for dessert.
2 large eggs
1 1/4 tbsps butter
1/2 tsp salt
1 tsp vanilla extract
3 <span class="measurestring" title="small (6" to 6-7/8" long)">small</span> bananas
1/2 cup packed raisins
1/2 cup pieces or chips walnuts
2 1/2 tsps baking powder
1/2 tsp baking soda
1/2 cup sugar
1 1/2 cups flour
Pour hot tea over raisins and allow to soak while you prepare the rest of the ingredients.
Pre-heat oven to 340 °F (170 °C).
Sift flour, baking powder, baking soda and salt into a bowl. Melt the butter and combine it with the sugar in another bowl, then add the eggs one at a time.
Mash the bananas and add these to the wet ingredients too.
Stir in the walnuts, drained raisins and vanilla extract.
Finally stir in the flour mixture a third at a time.
Scrape into a loaf tin (buttered and floured) and bake for 1 hour until a skewer comes out clean.
