Southwest Stuffed Red Peppers
Super tasty and fancy red peppers stuffed with beef, rice, corn, tomato and salsa.
2 <span class="measurestring" title="medium (approx 2-3/4" long, 2-1/2" dia)">medium</span> red peppers
1 cup corn
1/4 cup rice
1 cup salsa
14 1/2 oz crushed or diced tomatoes
1 1/2 lbs lean ground beef
Combine frozen corn, salsa, rice and ground beef adding salt and pepper to taste.
Cut peppers in half and clean. Stuff mixture into pepper halves and place in a deep dish pan.
Cover stuffed peppers with the can of crushed/diced tomatoes and bake in the oven for approx 45 minutes at 400 °F (200 °C).
Note: this dish also works great in a crockpot.
