Shrimp and Celery Salad
Easy to put together salad that you can take with you for a quick lunch.
4 oz sour cream (1/2 cup)
1 1/2 tsps curry powder
1/4 tsp salt
1/4 cup mayonnaise
1 fl oz lime juice (2 tbsp)
4 <span class="measurestring" title="stalk large (11"-12" long)">stalks large</span> celery, thinly sliced
1 <span class="measurestring" title="large (8-1/4" long)">large</span> cucumber; peeled, seeded and thinly sliced
1 1/2 lbs shrimp; peeled, deveined and cooked
Whisk together sour cream, mayo, lime juice, curry powder and salt in a large bowl.
Add shrimp, celery and cucumber; toss gently to coat. Refrigerate until ready to serve.
A serving is approximately 1 1/2 cups.
