Red Kidney Beef Chili
A pantry clean out - dark and light red kidney beans, diced tomatoes, chicken stock, and onion, with a frozen hamburger patty and seasonings.
1/2 tbsp extra virgin olive oil
3/4 cup no salt added diced tomatoes
1 tbsp chili powder
1 tbsp cumin
1 tsp leaves oregano
1 dash freshly ground black pepper
1/4 tsp salt
1 <span class="measurestring" title="cup (8 fl oz)">cup</span> chicken stock
3 cloves garlic, chopped
1 <span class="measurestring" title="medium (2-1/2" dia)">medium</span> onion, chopped
15 oz light red kidney beans
15 oz dark red kidney beans
4 oz hamburger patty (80/20)
Heat olive oil over medium heat in a 2 quart sauce pan.
Add chopped onion and garlic. Cook for 5 minutes, until almost transparent.
Add your choice of meat/hamburger patty, and cook until browned.
Add in chili powder, cumin, oregano, salt and pepper. Cook for another 5 minutes.
Add tomatoes, rinsed beans and chicken stock. Stir well and bring to a gentle simmer.
Cook for 20-25 minutes, until thickened and fragrant.
