Hearty Beef Meatloaf
Meatloaf with mushrooms, onions, tomatoes and peppers.
1/4 <span class="measurestring" title="cup (8 fl oz)">cup</span> beef stock
1 cup pieces or slices mushrooms
1/2 cup chopped onions
1/2 cup chopped green peppers
3 lbs lean ground beef
12 oz crushed tomatoes
sauté mushrooms, green peppers and onions in cooking spray like Pam until onions are clear.
Add beef broth and let simmer for 5 minutes.
Set aside and allow to cool.
Mix ground beef and 1/2 the can of crushed tomatoes.
Fold in mushrooms, green peppers, onions and beef broth.
Shape in to a loaf and make a reservoir in the top for the rest of the crushed tomatoes.
Bake at 400 °F (200 °C) for one hour or until juices run clear.
