Fettuccine with Light Alfredo Sauce
A lighter version of a favorite pasta dish.
16 oz fettuccine pasta
2/3 salted butter
1/4 cup parmesan cheese, grated
2 cups fat free half and half
1/4 tsp nutmeg
1/4 tsp pepper
1/4 tsp salt
2 cloves garlic cloves, minced
3 tbsp flour
In saucepan melt the butter.
Add minced garlic cloves; cook over low heat 1 minute.
Whisk in 3 flour, then whisk in fat free half-and-half until well combined.
Finally, whisk in salt, pepper and nutmeg, and bring to boil, whisking frequently.
Reduce heat and simmer 5 minutes or until thick.
Remove from heat and stir in grated parmesan cheese.
Serve over cooked fettuccine.
