Chocolate Zucchini Cake
Surprise yourself with this healthy chocolate zucchini cake.
1/2 cup butter
1/2 cup low fat milk
2 large eggs
1/2 tsp cinnamon
1/2 tsp cloves
1 tsp vanilla extract
1 tbsp vinegar
1/2 cup vegetable oil
2 cups sliced zucchini, shredded
1/2 tsp baking powder
1 1/2 tsps baking soda
4 tbsps cocoa
1 3/4 cups sugar
2 1/2 cups flour
Cream the butter, oil, sugar and vanilla.
Add eggs and set aside.
Sift flour, cinnamon, cloves, baking powder, and a teaspoon of baking soda together, then set aside.
Mix milk, vinegar, and 1/2 a teaspoon of baking soda.
Blend all ingredients together and add zucchini.
Put into two greased and floured loaf pans, or one greased and floured bundt pan.
Bake at 325 °F (160 °C) for approximately 1 hour.
