Chicken Noodle-less Soup
Simple chicken soup packed with veggies.
1/2 tsp pepper
1/2 tsp salt
8 oz chicken tenders
29 oz chicken broth, low-sodium
1 cup strips or slices carrots
1 cup chopped celery
1 cup pieces or slices mushrooms
1/2 cup chopped onions
1/4 cup fresh parsley, chopped
1 cup chopped zucchini
1 <span class="measurestring" title="cup (8 fl oz)">cup</span> water
In stockpot, bring chicken broth and water to a boil. Cook chicken about 5 minutes, or until done. Remove chicken to cutting board to cool.
Add onion, carrots and celery and boil for about 10 minutes or until vegetables are tender.
Add zucchini and mushrooms and cook for an additional 5 to 10 minutes.
Shred chicken with two forks and add to stockpot.
Add salt and pepper and stir in parsley.
