In large frying pan, sauté spinach in olive oil. Spread spinach evenly over the pan. |

Mix cream and eggs. (You can substitute milk for cream). |

Pour egg mixture over spinach. |

Cook over low heat until eggs are firm, or cook in the oven. |

After eggs are firm, flip the eggs and spinach 'crust' over in the frying pan. |

Add tomatoes and feta cheese. |

Cover frying pan over low heat until tomatoes and cheese are warm. Cut into four slices and serve. |

Note: for variety use salsa and shredded cheddar instead of tomatoes and feta. |
