1. | Pre-heat oven to 350 °F (175 °C). |
2. | Mix flour, oats, baking powder, soda and pepper. In a separate bowl, mix pumpkin, applesauce, eggs, milk, vanilla, walnuts and raisins. No sugar needed because the pumpkin, applesauce and raisin make it sweet. |
3. | Add dry mix to the pumpkin and stir until just blended. |
4. | Lightly grease muffin pans with margarine (optional) or use non-stick spray. |
5. | Place muffin pan in the center of the oven and bake for about 20-25 minutes (check to see if done with a knife). |
