Peanut Butter & Banana Quick Bread
Easy, healthy and delicious peanut butter banana bread.
1/3 cup skim milk
4 tbsps light peanut butter
1 cup whole wheat flour
2 large egg whites
1/4 cup canola oil
3 <span class="measurestring" title="small (6" to 6-7/8" long)">small</span> bananas
2 tsps baking powder
1/2 tsp baking soda
1/4 cup brown sugar
1 cup flour
Heat oven to 350 °F (175 °C).
Beat oil, milk, egg whites and peanut butter with whisk until well blended. Stir in bananas.
Mix remaining ingredients. Add to banana mixture; stir just until dry ingredients are moistened.
Pour into greased and floured 9x5" loaf pan.
Bake 50 to 55 minutes or until toothpick inserted in centre comes out clean. (Do not over bake.)
Cool bread in pan 5 minutes; remove from pan to wire rack. Cool completely.
