Best to use a tin of corned beef which you cube and put in a shallow ovenproof dish. |

Slice or dice the onions, chop mushrooms and add to dish. |

Whisk the eggs with cheese, salt and pepper and any herbs you fancy (a dash of Worcestershire sauce adds a kick). |

Pour over corned beef mixture. |

Bake in the oven at about 350 °F (180 °C) until golden and bubbling. Allow to cool for 10 minutes before cutting.

Note: Recipe can be varied to suit whatever meat or veggies you have hanging around; peppers, chicken, ham, veggies, the only limit is your imagination! You can also make low fat by substituting the cheddar cheese for cottage cheese although not for Atkins followers! |
