Rinse lentils in cold water. Set aside. |

Dice onions and tomatoes. Slice a carrot into small strips, or buy "matchstick" carrots, use a 1/4 cup or more to your taste. Set aside. |

Cut leftover pork loin into small pieces. Approximately 8 ounces. Set aside. |

Sauté onions in olive oil until soft. Add tomatoes and carrots. Add listed spices, measure to your own taste. Sauté all ingredients for five minutes. |

Add pork pieces. Add enough cold water to cover. |

Bring to a boil. Turn down and cook until lentils are tender. (You can also cook this in a pressure cooker, following the same instructions, but the cook time will be shorter.) |

Serve alone or the side dish of your choice. Rice makes a good side dish, if your diet allows. |
