Cauliflower Au Gratin Soup
A favorite dish made into a great tasting soup.

Ingredients
Directions
  1. In a sauce pan boil onions and peppers in broth until tender. Reduce heat.
  2. Cut cauliflower into bite size pieces. Steam or zap in microwave until tender.
  3. Cube Velveeta cheese and add to broth. Make sure not to allow this to boil otherwise it will curdle.
  4. Stir until cheese is melted.
  5. Drain cauliflower and add to soup.
  6. Pepper to taste.
  7. While not thick like "real" cheese soup it's great for a cold Winter day!
