Cauliflower Au Gratin Soup
A favorite dish made into a great tasting soup.
||In a sauce pan boil onions and peppers in broth until tender. Reduce heat.
||Cut cauliflower into bite size pieces. Steam or zap in microwave until tender.
||Cube Velveeta cheese and add to broth. Make sure not to allow this to boil otherwise it will curdle.
||Stir until cheese is melted.
||Drain cauliflower and add to soup.
||Pepper to taste.
||While not thick like "real" cheese soup it's great for a cold Winter day!
