8 Minute Microwave Cupcake
A super quick, delicious cupcake which literally only takes minutes.
2 tbsp 0% plain Greek yogurt
1 tsp brown sugar sweetener
1/2 tsp baking powder
1/4 cup egg substitute
1/4 cup chocolate protein powder
5 tbsp unsweetened vanilla almond milk
2 rounded tsps decaf instant coffee
Combine all ingredients.
Divide into 2 lightly greased coffee cups.
Cook on high power for 2-3 minutes, 1 minute at a time (watch this part closely to ensure they don't overflow).
Note: try swapping dark cocoa for the coffee.
