1. | Clean and grate enough zucchini to make 3 cups, leave skin on. |
2. | Combine flour, cinnamon, baking soda, baking powder and salt. Set aside. |
3. | In mixer bowl combine eggs, brown sugar, apple sauce and vanilla extract. |
4. | Add flour mixture to wet ingredients and beat well. |
5. | Add zucchini and raisins and combine well. |
6. | Use baking spray on mini loaf pan and scoop batter into pan. |
7. | Bake at 325 °F (165 °C) for 30 minutes. |
8. | Cool in pan for 20 minutes. Turn out loaves and allow to cool. |
