Directions

1. Chop the pineapple, mango, strawberries, and kiwi and place in a bowl.
2. Chop the mint fine (it’s very strong so a little goes a long way), and add to fruit.
3. Add the blueberries whole and then squeeze the juice of 1 whole lime over fruit, mix and serve.
4. You can make this the night before, but I would recommend adding the lime juice and mint shortly before serving.
5. Note: you can chop the fruit in larger or smaller pieces depending on whether you want to eat it like fruit salad or on fat free tortilla chips as a salsa.
